Pacific Organic Red Pepper Soup

Now that I'm back from vacation I need to drop the 13lbs I gained eating bagels, pizza and drinking tons of beer almost daily. My eating and workout plan began today with a 3 day liquid cleanse where Organic Roasted Red Pepper & Tomato Soup by Pacific was my only none juice yet liquid meal.


After buying a bunch of organic veggies for my juice cleanse: kale, chard, celery, carrots, parsley, ginger and oranges, I decided to get something a bit 'fun' and filling for nighttime and opted for the soup. The cartons were $3.69 each so I only got one. Now one carton can last me about 4 days because I'm only having it for dinner and even though it's absolutely delicious on its own I like to add chopped garlic, fresh parsley, fresh basil and shredded cheese to the mix.

Regardless of my additions to make Pacific's soup a bit tastier I can;t get over the price so I decided to do what I've been doing almost every time I encountered this situation: I"m going to make it myself! I've made my own marinara sauce but never made a soup from scratch so I did some research and found this amazing recipe by Cookie & kate. The recipe is very clear, her steps are easy to follow and the end result is home made soup that costs a lot less per ounce and doesn't contain tons of sodium or garlic and onion powder.

When I'm done with my batch I'm going to put it in glass jars to freeze like how it was recommended by Cookie+kate. One change that I'll make is to forgo the vegetable broth. I am not a fan of any type of broth so it'll be substituted with water with onions, garlic and olive oil. I'll report when it's done!
