Caprese Bites

Last week I was craving a Caprese Salad but wanted to make it look more appealing. Traditionally it's very beautiful to look at but since I'm all about bite size food I wanted to try a different spin.  I used the same ingredients that go into any caprese salad except I added garlic and didn't bother with the olive oil. Next time I'll drizzle a bit on top but in the end these turned out amazing. A Caprese Salad is Mozzarella cheese, Tomatoes, Basil and Olive Oil and there really is no need for a recipe. You can plate these items however you want but the traditional method is a slice of tomatoes, mozzarella cheese basil and a drizzling of olive oil. Sometimes a bit of pesto is added into the mix but I prefer it without.

Cherry tomatoes, basil, mozzarella and garlic

I didn't chop the garlic, mozzarella or basil super fine because I wanted the colors to stand out

I cut the top portion of the cherry tomatoes and drained the insides into a bowl for mixing


I was surprised at how much fit into each cherry tomato!
